Scallion Pancakes

Today was a big day for cooking. Our family loves Thanksgiving, so I decided to do a Thanksgiving meal today. Instead of our usual 20+ lb. turkey, I roasted a 13 lb. turkey and made most of the fixings (green beans, mashed potatoes, stuffing from a bag, gravy, and cranberry sauce in the shape of a can). No pies or desserts.

I also revised a new picture book story that involved scallion pancakes, which prompted me to make a batch. Half way through, I realized I had no scallions in the house, so I ran out and got some.

  1. Wait, Thanksgiving? LOL! Are you messing with my mind? I actually love canned cranberry sauce. :)

    Yummy! I need to make scallion pancakes again...though I might wait until spring when our chives start growing.
